These Healthy Green Beans with Mushrooms and Pomegranates are the perfect last-minute dish for any special occasion! The bright green of the beans and red of the pomegranates make it a beautiful addition to Christmas dinner.

The reason I say this is the perfect last-minute dish is that it’s SO fast and easy to make. But despite the fact that it’s so quick it’s full of flavor and nutrition. What could be a better win for any cook in a hurry?

Green Beans with Mushrooms and Pomegranates

1 lb green beans
8-10 large white mushrooms
¼ cup butter
¼ cup pomegranate arils
Real Salt and pepper to taste
¼ cup Feta or goat cheese

Steam green beans until tender. In a large fry pan melt butter and saute mushrooms until lightly golden brown. Add green beans and season with Real Salt and pepper. Gently mix until combined. Remove from heat and garnish with cheese and pomegranate arils. To make this recipe quicker for holiday cooking, trim green beans ahead of time and purchase pomegranate arils instead of whole pomegranates or seed a couple of days in advance and refrigerate.
