Wash potatoes and cover with water. Bring to a boil and boil 5-8 minutes or until barely tender. Drain water and let sit until cool enough to work with. Cut potatoes into wedges. The smaller the wedges the more quickly they will brown. Put oil and the 1/4 cup ranch mix into a gallon size zipper bag. Mix until combined. Add potato wedges, a few at a time, and mix gently to coat. Place wedges on a baking sheet and bake at 475º until golden brown. Flip potatoes once during the cooking process. This should only take a few minutes on each side, depending on how large your wedges are.
