Roasted Beets and Goat Cheese Grain Bowl

 ½ cup butter
 2-3 garlic cloves, sliced
 6 fist sized beets, peeled and chopped
 1 tbsp dill
 ¼ cup lemon juice
 4 cups cooked bulgur
 Goat cheese or blue cheese to garnish

Melt butter on a stoneware pan at 425ยบ. Add all ingredients except bulgur and cheese to the pan and stir to coat. Bake until beets are tender, stirring often. We like our beets small so it usually takes between 45-60 minutes to bake. Watch closely. Place some bulgur in a bowl, top with roasted beets and garnish with cheese.
