Get ready to taste heaven! This grain bowl is full of the most mouthwatering flavor you have ever tasted. It also happens to be a pretty pink color so if you are wanting a healthy Valentine’s Day recipe that is free of artificial colors, then you are in the right spot. Our Roasted Beets with Goat Cheese is our most popular recipe so we thought we’d offer another version. Here it is and it may even be more delicious (if that is even possibleΒ wink )!

Beets are a powerhouse for health. They can protect against certain cancers, heart disease and birth defects. They can promote optimal health, have antioxidant benefits and aid detoxification.

As the grain base for this recipe, we use bulgur. It adds the most amazing flavor and texture! Where we used to use quinoa we now use bulgur. It’s lighter, sweeter and just plain fantastic. Among other things, Whole Wheat can support heart health, prevent type 2 diabetes, support weight control and prevent cancer.

Roasted Beets and Goat Cheese Grain Bowl

½ cup butter
2-3 garlic cloves, sliced
6 fist sized beets, peeled and chopped
1 tbsp dill
¼ cup lemon juice
4 cups cooked bulgur
Goat cheese or blue cheese to garnish

Melt butter on a stoneware pan at 425ΒΊ. Add all ingredients except bulgur and cheese to the pan and stir to coat. Bake until beets are tender, stirring often. We like our beets small so it usually takes between 45-60 minutes to bake. Watch closely. Place some bulgur in a bowl, top with roasted beets and garnish with cheese.
