Thanksgiving recipes (side dishes in particular) are some of my very favorites! The holiday is quickly approaching and it’s best to be prepared ahead of time.
One of the best things about Thanksgiving side dishes is that you can add so much nutrition to your feast. I love simple sides that are easy to make and leave your taste buds dancing.

Roasted Beets with Goat Cheese
Slice butter and put in the bottom of a dutch oven or casserole dish. Peel beets and cut into bite size pieces. Lay beets on top of butter and sprinkle seasonings on top. Bake uncovered at 375ΒΊ for 30-45 minutes stirring 3 or 4 times during the baking. Remove from oven when beets are tender and garnish with goat cheese when ready to serve.
