Stuffed Zucchini is a MUST for summer. With Labor Day right around the corner (and plenty of pumpkin recipes on their way 😉) I wanted to share a couple more tasty zucchini recipes. Because let’s face it, you can never have too many.

I have been making this recipe for years and years. There is no feeling quite like making a recipe straight from your garden. This Stuffed Zucchini is perfect for that. Summer is now complete. 😉

I often eat this as my whole meal because it is so balanced. It’s packed with veggies and also has a whole grain and a little bit of protein with the cheese. Not to mention the fact that it is delicious!

Stuffed Zucchini

3 small zucchini
¼ cup butter
1 small onion
3 cloves garlic
1 bell pepper
¼ cup cilantro
1 cup corn, fresh or frozen
1 ½ cups rice or quinoa, cooked
½ cup mushrooms
1 cup grated cheese
2-3 tomatoes

Cut off the ends of the zucchini and then cut them lengthwise. Very gently scoop out the insides to make a bowl. Reserve and chop the insides to use in the filling. Bake zucchini at 350º until tender crisp. Meanwhile chop veggies and sauté onions and garlic until they are golden brown. Add remaining ingredients except tomatoes and cheese. Heat through. Stuff the zucchini “bowls” with the filling and top with cheese. Continue to bake until the cheese is deliciously melted. Garnish with chopped tomatoes. Enjoy!
