Superfoods are the perfect foods to be incorporating into our diets! Itβs always a good bonus when you have a dish that is not only fast to make but also has a lot of those good ingredients.
Kale is a well known superfood, beans and grains make a perfect protein and are great fiber, vinegar helps the digestive system, mushrooms have been said to reduce risk of cancer and onions have long been used to help boost the immune system. Needless to say this salad is packed with good stuff!
Bitter greens are the kind we usually avoid. However we found that they actually complimented this dish quite nicely. The flavors are a little unusual making each bite a treat. The salad is very satisfying making it a great quick meal option. Bacon isnβt something we eat very often but with the good fats in it we definitely have some from time to time as long as it is nitrate and nitrite free. We always make sure to use organic and pasture fed bacon as well.

Wilted Salad with Mango and Bacon
Cook bacon and set aside. We like to cut the bacon into bite size pieces and fry them in a deep pan. Add onion to the bacon grease and sautΓ© 2-3 minutes. Add mushrooms to the onion and continue to sautΓ© for another 2-3 minutes. Stir in balsamic vinegar and sugar until well combined. Pour over salad greens while warm to slightly wilt them. Toss until all greens are coated. To serve place some of the wilted greens mixture on a plate and top with black beans, cooked grains, mango and bacon.
